Hooked on Instant Pot!

I like to meal plan and when I do it I plan for 14 days. I only meal plan dinners mostly, but sometimes make my husband lunches (make a-head and freeze burritos). It’s common practice to look online for fresh ideas for dinners. I’m not quit sure how it happened, but the next thing I know I’m looking up instant pot recipes taking up a whole afternoon along with the whole evening. Then I realize the pot I have isn’t what I need because it only did rice and grains. To Wal-Mart I went.

What I like about Instant Pot is, so far, it’s pretty easy. I’m by no means an expert, yet. LOL. I’ve tried almost all of the recipes I’ve saved and only one hasn’t panned out which would be the Giant Pancake. It’s the only recipe that’s given a “Food Burn” message. I’ve only tried recipes that the first step is sauting something. I didn’t discover until writing this that other recipes not requiring a saute step exist. I can’t wait to try those.

Here’s a list of recipes of what I’ve found online that we’ve deemed “a keeper”:

  1. Bang Bang Shrimp Pasta (can’t find the source/link) (By far our favorite. Double the sauce recipe or make another batch for next day left overs.)

  6. Chicken Taco Bowl (Required a Saute step. Can’t find the source/link)
  7. No Tahini? No problem Hummus
  8. General Tso’s Chicken
  9. Meatless Goulash
